Vegetarian Shepherd’s Pie is a twist to the original shepherd’s pie that is usually made from beef or lamb. It is called cottage pie if it is made from beef and shepherd’s pie if it is made from lamb. The minced meat was cooked in a sauce with vegetables and then a layer of crushed potato was put on top before you bake it.
It originated in the United Kingdom and Ireland.
Can you believe i only learnt about this great dish about 2 years ago. They had a dinner at my church and this great cook i know did cooked it, it was great. So she was gracious enough to share her recipe with us. Here it goes
Meal for six (6) person
4 lbs Irish potatoes
1/2 lb chick peas
1/4 milk( your choice)
1/4lb veggie cheese
2 pegs garlic
1/2 lb mix vegetable
Soy sauce 3 (tablespoons)
2 tablespoon oil
1 tablespoon salt
Put lentils and chick peas to cook
Wash and cut all seasons and Saute in small amount coconut oil. Then add cooked lentils and peas ,mix vegetables some soy sauce ,allow to cook together until all the liquid is gone.(not burn)😀
Wash,peel and cut
potatoes, put to boil
When cook crush potatoes,grater the cheese, add to potatoes milk ,butter, and cheese crush until it’s smooth.
Get your baking tray spread some of the potatoes at the bottom then spread some of the cooked lentils and peas on top of the potatoes
Put some potatoes on top of the lentils and chick peas spread it out, you’re doing a pie so spread it on properly
Put in the oven for 20 minutes then serve
Preparation time is about 2 hours.
