Curried Broad Beans
This curried broad beans recipe is so delicious, I love to cook it and I am sharing it with you today.
We can either use the can bean or buy the beans to cook for yourself, I prefer to cook the beans my self( cutting out processed foods)
- 3 cups broad beans/ 2 cans
- 2 tablespoon coconut oil
- Scotch bonnet pepper
- 6 cloves garlic
- Carrots and string beans
- Sweet pepper
Serves about six persons
Directions for the curried broad bean
So rinse off the beans and put the beans to soak for a couple of hours.
- Put the beans in some water and cook until tender(add pimento seeds and pepper)
- Heat up the oil in a frying pan and add your tomatoes, sweet pepper, escallion, thyme, garlic, scotch bonnet pepper to taste and turmeric or curry. saute
- Add your beans
- Put salt to taste
- Add your carrots and string beans about 10 minutes before you are ready to turn off the stove
If you are using the canned beans, then you would begin at the second step in the directions.
So I normally eat this with some pumpkin, rice or yam, green bananas, ripe plantains, potatoes…
You could also have it with fried dumplings or roti(this a very flat round bread normally cooked on a griddle)https://www.allrecipes.com/recipe/17225/roti-bread-from-india/
